The Epsilon Shiraz comes from the Greenock sub district of the Barossa Valley. Ancient soils provide a perfect blend of brown sandy loams over deep red clay bases. Hot summer days, and rolling hills which catch the cool evening breezes has put the little village of Greenock on the world map. The fruit is grown by Aaron and Julie Southern and made by Dan Standish and Jaysen Collins.

It was in 2003 over a meal at Vintners that the making of Epsilon took shape. To put that special Shiraz, which they had dedicated their time to, in a bottle. Jaysen and Dan would help do this. Aaron and Julie know they are in the right location with the right soils. The entire staff treats the vines respect, and this is what makes them produce such fine grapes.
