The farm of Piazzano, with its 31 hectares of vineyards and 3 hectares of olive groves, extends over the gentle hills south of Empoli and is crossed by the Rio di Camerata. The favorable microclimate, the clay soil rich in skeleton and meticulous work in the fields ensure a particularly good quality grape. The system of cultivation used for the vines is on trellises, Tuscan inverted and using the runner system with a number of plants per hectare which varies from 3,200 in the old planted fields to 5,200 in the new ones. The olive grove contains the typical Tuscan varieties: Moraiolo, Pendolino, Frantoio and Leccino which give the oil a very fruity and slightly peppery flavor. A valorisation of the typical features in the full respect for the environment is what characterises the farm’s policy thanks to the rediscovery of native vines, traditional production techniques and participation in the program of integrated pest management.
