The Barbaresco “Pajoré” is the most traditional style of Barbaresco from Sottimano. This wine is a picture of elegance, with striking balance and perfect ripeness

Pajore is one of the most famous vineyards in the Langhe, located in the Treiso township. The heart of Pajore sits at an elevation of 230 – 300 meters with very lean calcareous, marly soil in the best plots. Fermentation takes place in oak, of which about 30% is new, followed by 18-20 months in neutral barriques.

Robert Parker's The Wine Advocate Issue #197 : 93 points Oct 2011

"The 2008 Barbaresco Pajore, from one of the best vineyards in Treiso, is a harmonious, totally complete wine. It flows from the glass with menthol, spices, pine, dark cherries and licorice in a wonderfully expressive style that captures the essence of this site. It is one of the few 2008s that has fine definition in aromatics, fruit and structure. All of the elements meld together beautifully towards the sweeping finish. This is undeniably attractive."
