The Dry Creek Valley Sauvignon Blanc offers aromas of daffodil and lemon zest (characteristics of fruit from Block 2) with a forward fruit and slightly tropical flavors from Block 3 fruit. Block 4 fruit rounds out the blend with grapefruit flavors and a creamy finish.   The acidity and balance of this wine are the result of careful winemaking. They direct-pressed 67% of the fruit in order to retain freshness and acidity, fermenting it in barrels with only 8% new French oak. Fermenting in neutral oak allows the flavors to “marry” while increasing the texture of the wine.
