The Chardonnay is Handley Cellars’ first wine made entirely from organically grown grapes. With its beautiful pale golden color, this wine is pleasing to the eye as well as to the palate. Aromas of honeysuckle and ripe apples move to pear and apple flavors, with mineral accents. Handley gave this Chardonnay a balanced oak regime, fermenting and aging it in a combination of new and neutral barrels and puncheons. The wine was aged sur lies through the month of May, giving it a pleasing texture and subtle creaminess. Twenty-five to thirty percent of the wine completed malolactic fermentation.
