The Aubrys use concentrated must instead of sugar for their dosage, the palate “reads” the sweetness differently. There’s more of a fructose texture, a clotted-cream kind of grip. These Champagnes alternate between lovable and impressive, and occasionally both. 40% Chardonnay, 45% a mix of Meunier and Pinot Noir, with 15% still red in part from 60-year-old Meunier vines. The nose is just like Copper river Chinook; ripe, salty and tangy; the nicest Rosé from here for several years.
